What is a Barista? Barista is the Italian word for a ‘bartender’ and is the name given to an expert operator of an espresso machine. In many parts of Europe, and especially in Italy, the barista is valued and the post is regarded as a career position. Often skills and training are passed down from generation to generation. Interestingly, some Coffee Shop chains have started referring to their staff as baristas, but it does not mean that they are highly valued or paid.

What is bar?  It is a unit measurement for the pressure that espresso coffee is made under (at least 9bar of pressure [at least 130PSI])- and not the counter from which espresso is served.

What is Fairtrade?  The Fairtrade Foundation is the independent non-profit organisation that licenses use of the FAIRTRADE Mark on products in the UK in accordance with internationally agreed Fairtrade standards. Their vision is of a world in which justice and sustainable development are at the heart of trade structures and practices so that everyone, through their work, can maintain a decent and dignified livelihood and develop their full potential.

What is Organic?  The Soil Association (UK) state that ”Organic systems recognise that our health is directly connected to the food we eat and, ultimately, the health of the soil. Organic farmers aim to produce good food from a balanced living soil. Strict regulations, known as standards, define what they can and can’t do. They place strong emphasis on protecting the environment. “
